Eggless Caulifower Crust Pizza

This pizza has been having its fame and popularity in the social network for quite sometime, mostly for the fact that it's gluten free. A variation from the routine diet is much preferred on Wednesdays for me. So Wednesday dinners are usually anything other than Roti or Rice, which makes it range from Pizzas to Burgers and whatever can come in between!

I love making my food from scratch! I am sure there are quite a lot of people like me who prefers that way too. It gives me joy, satisfaction and assurance about what goes into my loved ones' tummy. I love baking and I may not be an expert, but I try out everything I can. The only preference being eggless since I rarely like to add eggs when I bake. So when I saw this pizza with cauliflower base doing the rounds, I had to make it. It was doughless, no-yeast and less work. What more reason do you need especially when you crave for pizza all of a sudden and there is no proofed dough at home! I scouted the net for eggless recipes and finally figured out a way to do it!

Ingredients:
  • Cauliflower - 1 large
  • Cheese - 1/2 - 3/4 cup (parmesan/ parmesan + mozarella/ parmesan + cream cheese)
  • Salt - to taste
  • Pepper - 1/4 tsp
  • Italian seasoning - 1 tbsp
  • Pizza sauce
  • Your favourite toppings
Method:
  • Cut the cauliflower into florets and clean them. Dry them completely.
  • Process the cauliflower until fine and coarse
  • Transfer this into a microwave safe bowl, cling wrap it tightly and cook for 7 minutes. 
  • Once it cools down, place it into a cheesecloth  and squeeze out the water. Repeat till no water comes out and it is dry.
  • Preheat oven to 210°C.
  • In a bowl, mix cauliflower, cheese, salt, pepper and the seasoning.
  • Arrange the dough into the baking tray and spread it out with your fingers.Do not make it too thin as the crust will become soggy. 
  • Bake for 20 minutes or until crust is firm and golden.
  • Top with your favourite sauce and toppings and place it back in the oven and toast for an additional 5-8 minutes until the cheese melts. 

Peppa Zzing - One Of The Best Burger Joints In Bangalore

One summer's night in 2013, the husband & I had this sudden craving for burger and there started a search to find the best burger joint in Bangalore. We checked up Zomato - our google for food related queries plus random google searches led us to quite a few amazing reviews about Peppa Zing.

We decided to have dinner here the next day and we weren't disappointed! It's a very small joint located at Infantry Road - a walking distance from Safina Plaza. We were greeted with a smile by Mr. Reddy (I hope I got his name right!), who was very helpful in describing the menu to us. We ordered the Barbecued Chicken Wings for starters, which Reddy offered to make it fiery as well so as to suit our taste buds. We also ordered for the Peppa Zing Chicken Burger and the Chilly Hot Burger.

Barbecued Chicken Wings

The Barbecued Chicken Wings were finger licking delicious. The chicken was cooked to perfection and the sauce was exactly how we wanted. The burgers come in baskets accompanied by wafers. The Chilly Hot Burger was true to it's name - the patty was spicy but for someone who loves spice, it was at the right spice level. Nevertheless, it was yummy. The Peppa Zing Chicken Burger was the best. It was yummy, juicy and it melted in the mouth. The patty was topped with cheese and fried egg in addition to onions and mayo! It was one of the best burgers I've had in Bangalore! The husband felt that since they serve such yummy burgers, they should replace the wafers with french fries for an even better burger experience. Your hands are sure to get messy at the end of it but don't worry, they give you finger bowls :) The cost came to approximately Rs. 700/- for two, which was pretty reasonable, considering the taste and service. Oh, and they also provide outdoor barbecue service, if any of you are interested!

We had such a wonderful experience that day- the yummy burgers and the friendly service, that we left with an overloaded yet happy tummy and a big wide grin on our face. Since then, this has been our go to place for burgers, many a time taking our out of station friends too for an amazing burger experience.  However, over the years I turned vegetarian and sadly, considering the amazing non veg burgers they have, their veg burgers are just fine. Yet, we still see ourselves going back every now and then because the burgers here have definitely left a mark in our heart!

Motherhood

                                                              


I've had so many people come and tell me "You don't look like a mother", "You still look the same even after a baby" and the like. Which made me wonder always whether there was a particular or pre-determined way as to how you should look post delivery. You hear from experienced people, every single chance they get to let you know, that you change post baby!

Motherhood does change you, but it's much more than physical. It doesn't have anything to do with your appearance and it is way more than what your body undergoes. It changes you mentally, it changes your perspective about things and it definitely changes your priorities! Last day, I was having a bad migraine and was telling my friend how, earlier whenever I used to get migraine, all that I did was get into my bed with no light and sound whatsoever and let it pass. That was a necessity, then, to combat migraine. But now, that same necessity has become a luxury! I have a baby who comes running to me anytime he needs me, irrespective of whether his Amma has migraine or not, and in that moment, lying down with no lights and sound takes a back step.

Motherhood has taught me many emotions that I never thought existed. Every time I see/read about a child in distress, be it real or fiction, it rips me apart. My heart breaks into a million little pieces and it takes every nerve in my body to get back to normal.Being a mother has taught me to be selfless as well as selfish, strong as well as weak, detachment as well as possessiveness and many many more. And that is how being a mommy has changed me - learning new things daily, preparing for the unprepared and being on my toes all day (and night as well) long!


I may not look like a Mom, but I definitely feel like one. And I am not the same, I have changed in many ways than one! That is what Mommyhood did to me!
